In Gazzera, Mestre

A family story and a passion for the sea

In Gazzera, in the heart of Mestre, Baccalàdivino carries on the flavours of the Venetian lagoon as a true family business. In the kitchen you will find chef Franco Favaretto with his son Pietro; in the dining room his wife Paola welcomes guests and, as a sommelier, chooses the wines.

The star of the menu is Norwegian stockfish: it comes straight from the Lofoten Islands and is carefully selected, piece by piece. Alongside salt cod you will find the fresh catch of the day, meat dishes and our pizzas.

The journey of salt cod

From the Lofoten Islands to the lagoon

For our chef, salt cod is a journey that links Norway to Venice, with centuries of history behind it.

  1. I

    The Lofoten Islands

Northern cod, air-dried in the traditional way: this is stockfish, the base of Venetian baccalà.

  2. II

    The selection

We hand-pick only top-quality stockfish, one by one, and bring it from the Lofoten Islands to our kitchen.

  3. III

    Our kitchen

Creamed (mantecato), Vicenza-style, Venetian-style, baked in a pasticcio or fried as fritters: traditional recipes, made fresh every day.

Røst, LofotenVenice

The story of salt cod

Since 1432, the journey of stockfish

In the winter of 1431 the ship of the Venetian merchant Pietro Querini was wrecked in the North Sea. The survivors found shelter on the island of Røst, in the Lofoten archipelago, where local fishermen took them in for months and introduced them to cod dried in the wind.

Back in Venice, Querini told of this fish that kept for months: this is how stockfish entered Venetian cuisine, where to this day it becomes creamed cod, Vicenza-style and Venetian-style baccalà.
